In a quest to be healthier we've been trying out some vegan and raw desserts, for healthy sweet alternatives to the usual sugar fixes that can leave you, well, after the initial sugar rush, quite frankly feeling bloated, guilty and fatigued! Here are some of our faves that will leave you feeling light as a feather, sweetly-satisfied and energised to boot...

Grind the almonds in a food processor. Add the coconut, dates, and water and grind into a dough. Add the coconut oil last. Grind again into a mixture that holds together when pressed. Press into the bottom of mini or 6" spring form pan (crust will be thin in a 6" - you can double the recipe if you want it thicker) and set aside, slice and serve.
Blend the avocados, agave, lime, vanilla, and stevia until smooth and creamy. Add the oil, butter, and some zest. Blend to incorporate. Add more zest if needed. Pour over the crust. Allow to firm in the fridge for at least 8 hours.

Pulse the walnuts in your food processor until they become a rough flour. Add the raisins and process until it stick together, forming a rough dough. Press into a tart tin. Put in the fridge and let it set for about 2 hours (this is preferable but not absolutely necessary).
Blend all the ingredients until smooth. Spread gently into the bottom of your tart crust and then let it harden in the fridge for 30-60 minutes. Now top the tart off with all the berries, slice and serve.

Combine all ingredients in a blender or food processor. Blend on low speed first, building up to high speed, continuing until whipped and creamy. Pop food processor/blender vessel into the fridge until ready to serve. Use a piping bag or spoon into glasses, sprinkle with chopped raw chocolate or cacao nibs, garnish with extra mint leaves, and enjoy!
